🔪 Instructions

1. Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add the spaghetti and cook according to package directions until al dente (firm to the bite).
  3. Crucial Step: Before draining the pasta, reserve at least 1 cup of the starchy cooking water.
  4. Drain the spaghetti and set it aside.

2. Infuse the Oil

  1. While the pasta cooks, heat the olive oil in a large skillet or pan over medium-low heat.
  2. Add the sliced or minced garlic and the red pepper flakes. Sauté gently for 1–2 minutes, until the garlic is fragrant and light golden. Do not burn the garlic, as it will become bitter.

3. Create the Sauce Base

  1. Add the reserved pasta water and the butter to the skillet.
  2. Increase the heat slightly to bring the liquid to a gentle simmer, whisking to emulsify the butter with the water and oil.

4. Emulsify and Finish

  1. Remove the skillet from the heat. This prevents the Parmesan from clumping.
  2. Add the drained spaghetti to the skillet. Toss to coat.
  3. Quickly sprinkle in the freshly grated Parmesan cheese and continue tossing vigorously. The residual heat and the starch in the water will melt the cheese and form a smooth, creamy sauce.
  4. Season generously with black pepper and check for salt (the Parmesan is salty, so be careful).

5. Serve

  1. Serve immediately, garnished with extra Parmesan and fresh parsley, if desired.
