🔪 Instructions

1. Prepare the Mandarins

  2. Bring the mixture to a low simmer over medium heat.

  4. If you prefer a smoother jam, use an immersion blender to partially mash the mixture (or mash it with a fork) now.

3. Sweeten and Thicken

  1. Stir in the Erythritol (or other sweetener) and the lemon juice. Stir until the sweetener is fully dissolved. Taste and adjust the sweetness if necessary.
  2. Remove the pot from the heat.
  3. Immediately stir in the chia seeds and the vanilla extract (if using). Stir well for about 2 minutes to ensure the seeds are evenly distributed.

4. Set the Jam

  1. Transfer the warm jam to clean glass jars or containers.
  2. Let the jam cool to room temperature on the counter for about an hour.
  3. Once cool, seal the jars and place them in the refrigerator. The chia seeds will fully absorb the liquid and thicken the jam completely as it chills (about 3–4 hours).
