Instructions

  1. Prep: Preheat your oven to 325°F (160°C). Line a muffin tin with paper liners.
  2. Cream the Base: In a large bowl, beat the cream cheese and sugar until completely smooth. Scrape the sides of the bowl often—any lumps now will stay in the final muffin.
  3. Emulsify: Add eggs one at a time, beating on low speed until just combined. Stir in the vanilla and lemon juice.
  4. The “Silk” Step: Whisk the cornstarch into the heavy cream until dissolved, then pour it into the batter. Mix gently until the batter looks like thick satin.
  5. Bake: Fill the muffin liners nearly to the top. Bake for 18–22 minutes. They should still have a slight “jiggle” in the center—don’t wait for them to brown!
  6. The Chill (Crucial): Let them cool at room temperature, then refrigerate for at least 4 hours. This sets the fats and creates that melt-in-the-mouth texture.

  • No Air Bubbles: After pouring the batter into the tin, tap the tray firmly on the counter a few times to pop any air bubbles. This ensures a dense, creamy interior.
  • Room Temp is King: If your eggs or cream are cold, the cream cheese will seize up and create “beads” of cheese.
  • Topping Idea: These are amazing plain, but a dollop of lemon curd or a single fresh raspberry on top right before serving adds a nice tart contrast.
