adminka adminka, June 17, 2026

Every season, many home cooks preserve vegetables for winter, but some recipes disappear from the pantry much faster than others. This vegetable mix with mushrooms is one of those special preserves that always runs out first.

It’s flavorful, versatile, and perfect as a side dish, appetizer, or addition to main meals during cold winter months.

Why this vegetable mix is so popular

This recipe stands out because it is:

  • rich in flavor and aroma
  • easy to prepare in large batches
  • perfect for long-term storage
  • versatile for many dishes
  • loved by the whole family

Once you try it, you will likely want to prepare even more jars next season.

Ingredients for vegetable mix with mushrooms

  • 1 kg bell peppers
  • 1 kg tomatoes
  • 1 kg onions
  • 1 kg carrots
  • 500–700 g mushrooms (button mushrooms work best)
  • 100 ml vegetable oil
  • 2–3 tablespoons salt (to taste)
  • 2–3 tablespoons sugar
  • 100 ml vinegar (9%)
  • black pepper to taste
  • optional: bay leaves and garlic

How to prepare the vegetable mix

1. Prepare the vegetables

Wash and chop all vegetables:

  • slice peppers into strips
  • dice onions
  • grate or slice carrots
  • chop tomatoes
  • clean and slice mushrooms

2. Cook the mixture

In a large pot, heat vegetable oil and sauté onions and carrots until slightly soft. Add mushrooms and cook until they release moisture.

Then add tomatoes and peppers.

3. Season the mix

Add salt, sugar, black pepper, and optional spices. Mix well and simmer for about 25–30 minutes.

4. Add vinegar

At the end of cooking, pour in vinegar and mix thoroughly.

5. Sterilize and fill jars

Pour the hot mixture into sterilized jars and seal tightly. Turn jars upside down and let them cool under a towel.

Storage tips

  • store in a cool, dark place
  • check seals after cooling
  • avoid direct sunlight
  • consume within 6–12 months for best taste

How to use this vegetable mix

This preserved mix is extremely versatile:

  • as a side dish for meat or potatoes
  • as a topping for rice or pasta
  • as a quick winter salad
  • as a base for soups or stews

Why mushrooms make it special

Mushrooms add a deep, rich umami flavor that transforms a simple vegetable mix into something truly satisfying and aromatic.

Conclusion

This vegetable mix with mushrooms is one of those recipes that never lasts long on the shelf. It’s simple, hearty, and incredibly tasty. No wonder many home cooks say they always prepare dozens of jars — and still wish they had more for winter.
