  1. Prep: Preheat your oven to 150∘C (300∘F). Season the roast generously on all sides with salt and pepper.
  2. Sear: Heat the oil/lard in a large, heavy-bottomed pan or Dutch oven over high heat. Sear the roast for 2 to 3 minutes per side until deep golden brown. Set the meat aside.
  3. Aromatics: Add the chopped onions, carrots, and celery to the same pan. Sauté for 5 minutes until lightly softened. Add the garlic and herbs, and cook for 1 minute more.
  4. Deglaze: Pour in the liquid (wine/stock) and scrape up any browned bits from the bottom of the pan. Let the liquid reduce slightly.

2. Creating the “Envelope” (The Core Method)

  1. Foil/Parchment: Lay out a large double sheet of heavy-duty aluminum foil (or a large sheet of parchment paper over a single sheet of foil). Make sure the sheet is large enough to completely seal the roast.
  2. Base: Place the sautéed vegetables and reduced liquid/sauce mixture in the center of the foil/parchment.
  3. Meat: Place the seared roast directly on top of the vegetables.
  4. Seal: Bring the edges of the foil/parchment up and crimp them tightly together to form a completely sealed packet or “envelope.” The seal must be air-tight to trap the steam and moisture.

3. Roasting

  1. Bake: Place the sealed packet on a sturdy baking sheet. Place in the preheated oven.
  2. Cook Time: Roast for 3 to 4 hours (for 1.2 kg roast), or until the meat is incredibly tender and can be easily shredded with a fork. The cooking time is longer at this low temperature, but this is what ensures a moist result.
  3. Rest: Carefully remove the packet from the oven and let it rest for 15 minutes before opening. This allows the juices to redistribute.

4. Serving

  1. Open: Cut the seal of the envelope carefully (watch out for the hot steam!).
  2. Shred/Slice: Remove the meat and slice or shred it.
  3. Sauce: The liquid remaining in the envelope is a wonderfully rich, flavorful sauce! You can serve the meat and vegetables directly with this sauce, or strain and slightly thicken the sauce on the stovetop if desired.
